Butternut Squash, Quinoa and Broccoli Saute´
1 cup quinoa, dry (red quinoa adds more color)
2 cups chicken broth, low sodium
1-2 T olive oil
1 clove garlic, minced
1 tsp brown sugar
2-3 cups broccoli florets (or Brussels sprouts), chopped
3 cups butternut squash, cubed
2 T walnuts, toasted (optional)

Cook quinoa in chicken broth. Set aside. In a large sauté pan, heat olive oil. Add minced garlic, squash, Brussels sprouts and coat well. Cook covered over low heat until veggies soften. Use 1-2 tablespoons of chicken broth as needed to keep veggies from sticking to pan. Add brown sugar. Toss in quinoa. Garnish with toasted walnuts. Enjoy!
